Apple Cinnamon Loaf   Pizza Bread

Apple Cinnamon Loaf
Ladyannne - came out just delicious

1/3 c brown sugar
1 t cinnamon
Combine and set aside

Add in order to make batter:
1/2 c butter sofftened
2/3 c sugar
2 eggs
1 1/2 t vanilla
1 1/2 c flour
1 3/4 t baking powder
1/2 c milk

1 apple peeled and chopped

Preheat oven to 350°
Grease and flour 9 x 5 pan
Add half the batter
Add half the apples, gently pat into batter
Add half cinnamon mixture
Add remaining batter
Add remaining apples
Add remaining cinnamon
Lightly swirl top layer down to top apples
Bake 30 to 40 minutes till knife comes out clean
 

Pullapart Cheddar Ranch Rolls
Ladyannne - no idea where this came from but worth posting

Pillsbury biscuits, cut each one into 6 pieces
In a bowl with biscuit pieces, add:
1 cup cheddar grated
1/4 c chopped chives
1 T powdered Ranch dressing
3 T melted butter

Mix with hands, fill muffin pans
350° for 15 minutes

"I Hate Boys" Quick Whole Wheat Brown Bread

1/4 cup sugar 
1 egg 
1/2 cup old-fashioned dark molasses 
1 cup whole wheat flour 
2/3 cup all-purpose flour 
1 cup buttermilk 
1 teaspoon baking soda 
1/2 teaspoon salt
 
To make your own buttermilk, add 2 - 2 1/2 tablespoons vinegar to 1 cup whole milk. 
Let milk sit while curdling action is taking place.

Beat sugar & egg together, then beat in molasses and oil. 
Add remaining ingredients and mix well. 
Pour in greased and floured 9 x 5 loaf pan and let stand 15 minutes. 
Bake in preheated 350 oven for 40 minutes or until done according to toothpick test. 
Cool before cutting.

Killer Biscuits - I'm not telling

Add together in order:
1/2 cup butter softened
1 egg
1/4 cup sugar
1/2 teaspoon salt
3/4 cup buttermilk
1/4 cup club soda (must not be flat)
5 cups bisquick
Mix all and knead for short time. 
Pat out on board with HANDS, cut out with 2 " cutter.
Bake at 400 until deep golden brown. 
Killer recipe.  These store in frig well for days.

For Bread Machine

Attach kneading blade to drive shaft in bread case.
In bread machine place:
1/4 cup tepid water
1 stick very soft unsalted butter, 
1 cup sour cream
2 slightly beaten eggs
1 teaspoon salt and 3 tablespoons of sugar.
Add 3 and 1/4 cups bread flour. 
Make a small well in center (not deep). 
Add 2 and 1/4 teaspoons bread machine yeast.
Select dough mode to mix and knead for 30 minutes
	(stop before it goes to rise.)
Remove at once from machine and place in a large bowl 
	that has a little flour in it, and sprinkle lightly with flour.
Divide into 3 parts. 
Roll each one out on a floured board into a circle.
Keep other two covered until ready to roll out. 
Spread with very soft butter.
If you desire, sprinkle with a mixture of sugar, 
	cinnamon and white raisins.
Cut in half, then into fourths, then eighths until you have 16. 
Roll from outside in. 
Place on buttered cookie sheets. 
Cover with towel and place in a warm place to rise for 1 hour.
Brush top of each one with beaten egg white before baking. 
Bake 375 degrees for 15 minutes.
Should be just lightly brown, the bottom brown when turned over.

Makes 4 dozen.

Pizza Bread

1 or 2 loafs of Sweet or Sour dough french bread 
	(2-3 pieces per person)
Left over Spaghetti Sauce
3-4 Cups grated cheese 
	 (motzarella, jack, mild cheddar your choice)
Slice loaves lenth wise, then in thirds.  
Butter lightly and spoon on the sauce
Sprinkle with cheese
Put under the broiler for 5 min.. 
	or until cheese is bubbly... and toasted...
.... ready to eat... enjoy!!!

Refrigerator Yeast Rolls

These are close to foolproof,  and now a Thanksgiving standard.

6 - 6 1/2 cups flour
1/2 c sugar
2 t salt
2 pkg yeast, not fast rising yeast
1/2 c butter, soft but not melted
1 egg

Up to 1 week ahead:
Combine 2 1/4 cups flour, salt, sugar, yeast and butter, mix with mixer at slow speed
Add 2 cups HOT water, egg, beat at medium speed for 2 minutes or more
Add 1 cup flour, beat 2 more minutes
Add remaining flour mix by hand to a soft dough
Knead 10 minutes or more till smooth and elastic
Let rise in large greased bowl (covered with tea towel) 1 1/2 hours till doubled
 (Keep an eye on it, if no action in 15 minutes, move to warmer location)
Punch down (remove ALL air) and turn over, brush with oil or butter.
Place in airtight container and refrigerate.
Punch down occasionally until ready to use.

Cut dough into 30 odd pieces, try to keep piece size consistant.
Shape with kneading into roll shapes.
Place side by side (just touching but not crowded) on cookie sheet or baking pan
Rise 1 1/2 hours till doubled (covered with tea towel)
Bake ar 425 for 15 - 20 minutes.
Brush with butter.

The smell coming out of your oven is a little piece of heaven.

Zucchini Nut Bread
J19

3 Eggs
1 Cup Oil
2 Cups Brown Sugar
2 Cups Grated Zucchini, unpeeled
3 Cups Flour
1 Tsp. Salt
1 Tsp. Soda
1 Tbsp. Vanilla 
1 Cup Chopped Pecans

Beat eggs well. 
Add oil and sugar and zucchini. 
Mix thoroughly. 
Combine in another bow, flour, salt, and soda. 
Add dry ingredients to wet and mix well. 
Fold in nuts.  
Pour into greased and floured loaf pans.  
Bake at 350* for an hour. 
Remove from pans to cool. 
Makes 2 loaves.
